Description & Requirements

Role: Laboratory Intern - Shelf Life and Sustainable Packaging

Start Date: September/October 2022

Duration: 5/6 Months

Location: Nijmegen- The Netherlands

Detailed programme of the Internship:

The aim of this research is to accurately predict and validate the

shelf life of Sauces via Chemical- Physical and Sensorial analysis to

build a prediction model for Shelf life.

The focus will be on delivering:

  • A validated Condiment Sauces Protocol for Shelf life in new packaging
  • Understanding the validation of the protocol for different recipes & packaging
  • Validate Emulsions & Non Emulsions Sauces by Shelf life modelling

The following activities will be performed:

  • Review of relevant literature
  • Perform Chemical- Physical and Packaging analyses
  • Perform Flavours Analysis - Gas Chromatography
  • Update and or create a report about the Shelf life sauces model
  • Chemical & Physical/Pack analyses  to develop and validate the protocol and model
  • Create a report on new packaging validation for other sauces
    • Factory samples and Lab analysis
  • Execute practical activities (including shelf life tasting and lab analysis)
  • Create periodic reports and presentations to keep team informed about findings and progress
  • Sharing knowledge within the Innovation centre and other departments as of packaging (presentation and final report)

Internship Outcomes

1. Gaining knowledge about Condiment Sauces Shelf life in sustainable packaging principles- modelling and impact on product properties

2.      Independently work with internal colleagues of process- packaging or product team or external partners

3.      Learning laboratory techniques for measuring critical products attributes.

4.      Gain experience in working in a R&D environment

5.      Independently organize all required steps for the project like analyses plans- sensory evaluation- DOE and mathematical modelling

6.      Final presentation.

7.      Final report

Job requirements:

  • Relevant Bachelor or Master Degree in Food Science / Technology
  • Good communication skills and fluency in English- both written and verbal (Dutch is not a requirement but other languages are a plus)
  • Working experience in a relevant industry or role is advantageous
  • Ongoing enrolment at a university for at least 50% of the internship duration.

NOTE: EU working rights are required (Either you have EU Citizenship- you are studying in the Netherlands or you have a relevant EU student work visa)
