Essential Functions & Responsibilities
The Scale Operator, with brief verbal and simple written instructions from the Line Operator, is responsible for weights and composite of all groups and must record all information for blenders use and for record control. Must be familiar with all computer controls and adding machines at scale station. Work requires skills at mathematics and figuring percentages. Works closely with Curdbreaker Operator for start and ends of each group. The nature of this job is of simple, repetitive monitoring activity, which involves the performance of an organized group of many medium complex tasks, which can be learned within 3-4 weeks.
Job Responsibilities:
Production:
First bucket proper identification for vendor use. Weighs each bucket of cheese and records proper weight by group and varieties. Records lbs. of colored cheese, powder, holdover, blend and total group weight on computer operated workstation. Responsible for proper types and amounts of powder. Understand production ticket orders. Have an understanding of production schedule and block number schedule. Knowledge of holdover matrix. Must be able to operate the monorail system. Understanding of the CB1 system. Operator is responsible to watch closely for extraneous in cheese and listening for grinder noises, this could mean extraneous is caught behind screens. Follow all scale accuracy checks. Complete daily grinder scrape outs. Learn grinder tear down. Report shortages and overages of total group weights to Line Operators or Supervisor. Complete KHMS checks. As this is a highly varied position, employee must be willing to upgrade to any position as needed. Other duties as requested by Supervisor/Line Leads.
Quality:
Must be alert at all times of extraneous or mold in raw cheese. Must follow all GMP’s. Must know identification of tickets and codes for different groups. Follow all scale accuracy checks. Must complete Quality BOS as scheduled.
Safety
Be safety conscious at all times. Use correct PPE. Complete Safety BOS as scheduled. Follow all LO/TO and Safety Requirements. Must familiarize themselves with department JSA’s
Sanitation:
Directly responsible for housekeeping in your area. Responsible for properly following all GMP’s. Know all chemicals and cleaning products in the area. Participate in weekly final sanitation. Must be able to dismantle, clean, inspect and reassemble equipment.
Maintenance:
Must be able to perform minor repairs in the department Be able to disassemble bottom portion of grinders for quality checks. Must be able to report any defects when applicable.
Equipment Operated:
Computerized input scale and printer. Calculator All feeder belts .and shuttle conveyor. All control buttons for feeders and grinders. Powder-handling equipment. CB1 System.
Lifting Requirements:
Strenuous – Handling up to 100 lb. Powder bags and pushing 1,000 lb. Buckets along a track.
Working Conditions:
Fair – Noise level is high. Hearing protection is a must. Work is relatively fast paced. Room temperature is 65-75 degrees. During final sanitation, the environment will be wet, and floor may become slippery.
Value of Material:
Lack of proper attention could result in moderate inconvenience due to improper information to blenders. Could cause slowdowns and cheese rejects.
Training:
Scale Operator will be trained for a maximum of 30 days and is expected to be 90% competent after 3 months with all areas of the job and other duties assigned by the Line Leads/Supervisor.
